Moose Round Steak


2 lbs. moose round steak

1 tbsp. bacon drippings

1 1/2 cups red wine

1/2 cup beef broth

1 tsp. salt

1/2 tsp. crumbled dried thyme leaves

2 cloves garlic, chopped

1 onion, chopped

Half an orange, cut into small strips

2 tbsp. cornstarch blended with 2 tbsp. cold water

1 cup fresh mushrooms, sliced

1 (16-oz.) can small onions, drained

1/2 cup pitted black olives

1 (10-oz.) pkg. frozen peas

In large skillet, brown steak in bacon drippings. Add wine, broth, salt, thyme, garlic, onion and orange strips. Cover and simmer for 1 1/2 hours or until tender. Add cornstarch / water slurry and cook until liquid is thickened. Add remaining ingredients; cook until heated through. Remove orange slices before serving.
