6 whole dressed quail
1/2 cup herb stuffing mix, crushed
1/3 cup grated Parmesan cheese
2 tbsp. finely chopped green onion
1/3 cup butter, melted
Spilt quail down the back and flatten. Combine crushed stuffing mix, Parmesan cheese and green onion. Dip quail in melted butter, then coat with stuffing mixture. Arrange in 13 x 9 x 2-inch baking dish. Bake at 350°F for 30 minutes if quail are small; for larger quail add 10 to 15 minutes. Quail is done when meat can easily be removed from the bone.
